Super Sunday! Let’s Eat!

What’s up everybody, It’s Super Bowl week and it is time to finalize your Super Bowl Sunday menu. I have been hosting a Super Bowl party since I was in the 9th grade. My mom was always cool enough for me to setup the house with multiple TV’s, food and invite all my friends over. When I moved out of my Mom’s house at the ripe age of 22, I carried the tradition over and take great pride in my Super Bowl party and specifically, the food that I offer.

A must have at a Scors Super Bowl party is a sub or sandwich platter. I grew up in Troy,NY and there was only three choices for me when it came to the Sub Platter. You had a delicious sandwich platter from Ragonese Italian Imports in Albany. A sub platter from Pellegrino in North Greenbush or the 3-5 ft sub from Roma Italian Imports in Latham. Since I moved out of the area, I have had to improvise, last year the platter was subpar but this year I have high hopes for the place that I ordered from, but a must have at any respectable Super Bowl bash is the sub/sandwich platter. Don’t forget it, get your orders in now, there is still time.

To go along with the subs, you need to have a variety of chips. I like to go with Cool Ranch and Nacho Cheese Doritos and then obviously you need a classic flavored chip. I personally prefer the Original Lays but if you go with the Wavy Lays that’s a respectable choice. If you want to class it up than Cape Cod Originals are the move. Don’t be a peasant and offer Wise or UTZ. We don’t need people causing an uproar on Super Sunday.

In addition to those chips, I will always have multigrain scoops, they have a great crunch and per their name get the job done with dips. This year I will be offering a taco dip, sausage and cheese dip along with a rye bread dip. These are staples, they are heavy but not too heavy, a phenomenal compliment to your main courses. My Mom and Brother in Law will be making these. I then will go with either pigs in a blanket or mini hot dogs with all the fixings. These can be purchased at the store, makes for a simpler setup and taste just as good.

Now as a special treat, I will give you guys a couple of fun and easy recipes to try out for Super Sunday. I am a pretty good cook and I love to be in the kitchen making food for everyone. I am going to start with a fan favorite at a lot of my dinner and sports parties:

Scor’s Super Bowl Sausage & Peppers
So here we go, my Italian roots on full display with this meal, one of my all-time favorites. This is a real simple dish to complete and you only need a handful of ingredients. Obviously depending on how many people you have at your party, you might have to expand on the ingredients but I will make this for six sandwiches and cut them in half so that you have 12 mini Sausage and Pepper Sandwiches.

One pack of Hot Italian Sausage
Red Bell Pepper
Green Bell Pepper
Large White Onion
Olive Oil
Fresh Mozzerella
Grated Cheese
Oregano
Pepper
Salt
Italian Bread or Italian Crispy Sub Rolls

That’s all the ingredients you will need for this delicious meal. So first, in a medium frying pan put olive oil in a pan and heat over medium heat, while the olive oil is heating up, chop the peppers and onions in a thin manner, use the entire pepper and either half or three quarters of the onion. When the olive oil is heated, put the chopped peppers and onions into the pan and let them cook until tender. In another frying pan add a small amount of olive oil and add the sausages, poke a hole in all the sausages with a fork so that the juices are able to travel through the sausage and allow them to breath, cook on low to medium heat and season with a small amount of salt, generous amounts of pepper and oregano. Keep turning the sausage until they are golden brown on each side. When they are golden brown and nearly cooked all the way through, combine the peppers, onions and sausage into one of the pans and let them cook together with a cover on the pan for 5-10 minutes. While this is cooking, preheat your oven to 375 degrees, when the 5-10 minutes is complete transfer everything to a baking pan and add a decent amount of grated cheese. Waiting for the oven to preheat, cut your rolls and spread olive oil on both sides and season with salt and pepper and place in the oven. Bake the sausage and peppers and onions for about 7 minutes. Take the rolls and sausage and peppers out and you are ready to roll. Put your sausage, peppers, onions on the roll and top with the fresh mozzarella and let it melt. Enjoy!

Scor’s Chicken Wings
You might be asking yourself; shouldn’t I just order wings for the big game? Well, you can but in order to save money and in my opinion have a better quality of wings, then make them yourself. I set this recipe for about 40-45 wings. I cook these in the air fryer which is like the best wedding gift my wife and I could have ever received.

4 Packages of Chicken wings and drums
Salt
Pepper
Garlic Powder
Wing sauce of your choice
Bleu cheese or ranch dressing


Remove the wings from the package and season generously with pepper and garlic powder and a little bit of salt. Set your air fryer or fryer to 425 degrees. Place the wings in the basket and cook for 20-22 minutes, I like my wings crispy, so you will have to keep an eye on it and add time at your judgement. Chop your celery and carrots to serve as a side to your wings, put your bleu cheese or ranch into a small bowl to serve with the wings. Once the wings are cooked, put a layer of wing sauce in a deep bowl and add the wings, on top of the wings add more wing sauce. With utensils, toss the wings and cover with the wing sauce. Place the wings in a tray or plate and add the veggies and dressing on the side and you will have better wings than any restaurant in your area in a cost effective way.
